5 Tbsps olive oil
1 bunch thyme
1 ripe Avocado
Limes (juice)
1 cup Whipped cream
1 organic lemon (cut into wedges)
4 Red Pepperoncini

Preparation steps

Scrub the potatoes and cut them into thick slices. Pluck thyme leaves and mix with olive oil and salt and pepper to taste. Thread 3 potato slices on each wooden skewer and brush with the herb oil mixture.

Place skewers on the preheated grill and cook for 20 minutes, turning frequently. For the sauce, peel the avocado, halve, remove pit and mash flesh with a fork.

3.

Mix avocado with lime juice, salt and pepper to taste and creme fraiche. Serve the potato skewers with avocado sauce and garnish with peperoncini and lemon wedges.
