- For the sauce
- 3 ⅓ cups Tomatoes
- 1 Tbsp tomato puree
- 1 red chili pepper
- 2 shallots
- ½ red pepper
- salt
- peppers
- 1 Tbsp olive oil
- 2 Tbsps Basil oil
- 2 cloves garlic cloves
- 1 Tbsp Lime juice
- Worcestershire sauce (to taste)
- 1 tsp brown sugar
- ¼ cup vegetable stock
- For the meat
- 4 pork escalope
- salt
- peppers
- 2 Tbsps olive oil
- 4 green chili peppers
- halved, cherry Tomatoes (to garnish)

Preparation steps

For the sauce, cut a cross in each tomato at the stem end, drop into boiling water for a few seconds, refresh in cold water, then skin and chop. Wash, deseed and finely chop the red chillies. Peel and finely chop the shallots and garlic. Peel the red pepper with a vegetable peeler and finely dice the flesh. Heat the olive oil and sweat the garlic and shallots until translucent. Add the diced pepper and chopped tomatoes and sweat briefly, then add the tomato puree and chilli and sweat briefly. Then add the stock and simmer until the vegetables are soft. Puree the sauce, season with salt and pepper and add lime juice, Worcester sauce and sugar to taste. Finally stir in the basil oil.

Pound the meat lightly to flatten it, then season with pepper and brush with oil. Wash and dry the green chillies and brush with oil. Put the meat on the barbecue and grill for 2-3 minutes each side. Grill the chillies until they begin to colour. Serve on a plate and glaze with the sauce. Garnish with halved cherry tomatoes.
