These lamb chops are a great way to get a serving of protein from the meat and nutrients from the vegetables. Zucchini and tomatoes are both high in vitamins, minerals, and fiber, but they are low in calories and fat, making them a great addition to this meal for anyone on a diet.

Serve this with a side salad and some carbs like rice, bread, pasta, or potatoes to make a complete meal.

Preparation steps

1.

Peel garlic and chop. Rinse parsley, shake dry and chop. Mix garlic and parsley. Rinse and dry zucchini, cut diagonally into slices. Rinse tomatoes and cut off stems and lids. Season tomatoes with salt and pepper, drizzle with olive oil and spread garlic mixture on the cut surfaces. Arrange tomatoes upright in aluminum foil.

2.

Bake tomatoes in a preheated oven at 400°F for about 25 minutes. Brush zucchini slices with remaining olive oil and grill on a hot grill or in a grill pan for about 5 minutes per side, season with salt and pepper. Grill lamb chops for about 3 minutes per side and season with salt and pepper.

3.

Arrange chops, zucchini and tomatoes on plates and serve immediately.
