Grilled Lamb and Cherry Tomatoes Skewers
- For the lamb skewers
- 800 grams lamb (from the leg)
- 8 tablespoons olive oil
- 3 tablespoons light soy sauce
- 2 teaspoons salt
- 2 garlic
- freshly ground peppers
- 8 Skewers
- 2 teaspoons thyme
Cut meat into bite-sized pieces. Whisk oil vigorously with soy sauce. Peel and squeeze garlic through a garlic press. Season dressing with salt and pepper, add garlic and mix well.
Coat meat with marinade and refrigerate overnight. Next day, remove meat from marinade, pat dry and thread on skewers.
For the tomato skewers: rinse tomatoes and thread red and yellow tomatoes on skewers alternately. Place onto an oiled piece of aluminum foil and grill for about 15 minutes, turining often.
Baste lamb with marinade and grill until golden brown on all sides for about 8-10 minutes, turning frequently. Sprinkle with thyme leaves.
Arrange tomato and lamb skewers on plates and serve.
