Grilled Halloumi with Watermelon

- 18 ozs Halloumi cheese
- 20 ozs Watermelon
- 1 yellow onion
- 2 organic Limes
- 4 Tbsps olive oil
- salt
- freshly ground peppers
- 1 Tbsp liquid honey
- 3 sprigs mint
Cut cheese into 1/4 inch thick slices and then cut into in 1-1/4 x 3/4 inch pieces. Peel and seed watermelon and cut into 1/4 inch thick slices and then into 1-1/4 x 3/4 inch rectangles. Peel the onion, halve and cut into strips. Rinse the limes in hot water, cut 1 lime into wedges and squeeze the rest.
Mix lime juice with the oil, season with salt and pepper and mix with the onion and honey. Rinse mint, shake dry and pluck the leaves from the stems. Place the cheese on the hot grill and cook 5-7 minutes, turning frequently. Arrange with the pieces of melon on a plate like roof tiles, drizzle with the lime vinaigrette and serve garnished with the lime wedges and mint leaves.
