Preparation steps

Preheat the broiler. Line a baking sheet with parchment paper.

Cut the cheese into 12 slices. Brush with oil, season with salt and pepper, and place on the baking sheet. Broil for 3-4 minutes, until golden brown, turning once.

Rinse the tomatoes, remove the core, and cut into slices. Place a slice of tomato on top of the cheese, season with salt and pepper, and drizzle with oil. Sprinkle with the pine nuts, and brown lightly under the broiler for 1-2 minutes. Garnish with basil, and serve.
