- 1 shallot
- 2 garlic cloves
- 400 grams fresh, ripe Strawberries
- 4 Tbsps olive oil
- 50 grams sugar
- 2 centiliters Strawberry limes
- 2 Tbsps Red wine vinegar
- salt
- freshly ground peppers
- 4 fish fillets (such as halibut, cod, wolffish; each about 150 grams)
- 1 Tbsp chopped fresh thyme
- 30 grams butter (melted)
- 100 grams Beet Greens

Preparation steps

Peel the shallot and garlic and finely chop. Rinse, trim and cut the strawberries into small pieces.

Heat 2 tablespoons of oil in a saucepan and sauté the garlic and shallots for 1-2 minutes until translucent. Add the strawberries and sugar, deglaze with the strawberry lime liqueur and vinegar, season with salt and pepper and transfer to a bowl. Allow to cool.

Rinse the fish fillets, pat dry and season with salt, pepper and thyme. Cook on a hot grill for 15-20 minutes, turning, occasionally brushing with a little butter. Pick through the beet leaves, rinse, shake dry and transfer to plates. Place the grilled fish fillets on top and serve with strawberry salsa.
