Grilled Chile-Lime Chicken

- 8 Chicken thigh (ready to cook)
- 1 red chili pepper
- ½ tsp sweet ground paprika
- 3 Tbsps honey
- 4 Tbsps Lime juice
- 4 Tbsps olive oil
- salt
- freshly ground peppers
Preparation

Rinse the chicken and pat dry. Rinse the chile pepper, halve lengthwise, remove the seeds and finely chop. Transfer to a bowl, add the paprika, honey, lime juice and oil and mix thoroughly. Season with salt and pepper.

Brush the chicken all over with the honey-lime mixture, place on the grill and cook turning the pieces occasionally until crispy, brown and cooked through, about 15 minutes. Serve with mango chile dip, if desired.
