1 lemon (finely grated zest and juice)
2 Tbsps clear honey
1 Tbsp light soy sauce
2 Tbsps vegetable oil
4 skinless, boneless Chicken breasts (cut into cubes)
2 large, red Bell pepper (seeds removed and cut into pieces)
2 large, yellow Bell pepper (seeds removed and cut into pieces)

Soak wooden skewers in cold water for 30 minutes before using, to avoid burning.

Preparation steps

Mix together the garlic, lemon juice and zest, honey, soy sauce and oil. Pour the mixture over the cubed chicken in a shallow dish. Cover and leave to marinate for at least 2 hours or overnight. Add the peppers to the marinade for the last 30 minutes.

Heat the barbecue or grill.

Thread the chicken and peppers onto 15-20 wooden skewers.

Cook on the barbecue or under the grill for 7-8 minutes on each side, turning frequently and basting with the marinade from time to time, until the chicken is thoroughly cooked and golden brown.
