Carrots contain a lot of beta-carotene, a powerful nutrient which transforms into vitamin A in the body. However our bodys can only fully absorb the beta-carotene when the carrots are cooked. 

Serve the carrots with a dip of cheese and herbs, then the vegetables will change from side dish to main course!

3 tablespoons olive oil
½ teaspoon honey
1 ½ tablespoons Orange juice
½ teaspoon dried oregano
Sea salt

Preparation steps

Preheat the grill.

Peel and trim the carrots, then halve lengthwise. Mix the oil with the honey, orange juice, and oregano. Brush the cut surfaces of the carrots with the honey mixture and place on the hot grill.

Close the lid of the grill, and cook for about 6 minutes. Remove from the heat, season to taste with salt and pepper, and serve on a platter.
