Grilled Aubergine Bites
Arrange the discs of aubergine on a flat platter/surface and salt well.
Leave for 15-20 minutes, then pat dry really well to get rid of the excess water. Pre-heat the grill to hot.
Drizzle with the olive oil and grill on both sides for 2-3 minutes. Remove and top with the discs of goat's cheese.
Place a piece of diced bacon on top of the cheese and grill again for 2-3 minutes until the bacon is cooked and the cheese is lightly coloured all over.
