Grilled Artichokes with Parsley

Artichokes owe their unmistakable flavor and aroma to the bitter substance cynarin. Cynarin helps to lower cholesterol levels, supports the liver in its detoxification work, and activates the flow of bile, among other benefits.
Serve this on top of a side salad or on the side of a protein like chicken or steak.

- 1 garlic clove
- 3 Tbsps olive oil
- 16 small Artichoke
- lemon juice (for drizzling)
- salt
- peppers (freshly ground)
- 2 Tbsps chopped parsley
Preparation steps
Peel and finely chop the garlic, then mix with the oil.
Trim the artichokes, leaving the stem intact, then peel. Slice the artichokes lengthwise into 1 cm (approximately 1/2 inch ) thick slices, and drizzle immediately with lemon juice. Season with salt and pepper, and grill on both sides for two minutes (or you can sauté in a pan with olive oil).
Remove from the grill, transfer to a bowl, and drizzle with the garlic oil. Mix with the parsley, and serve warm.
