Green Salad with Watermelon
- Ingredients
- 2 handfuls lamb's lettuce
- 1 handful Arugula
- 1 small Radicchio
- 300 grams Watermelon
- 4 Tbsps balsamic vinegar
- 1 tsp honey
- 6 Tbsps olive oil
- salt
- freshly ground peppers
Rinse and spin dry mache lettuce. Rinse and spin dry arugula, tear into smaller pieces. Rinse radicchio and tear into smaller pieces as well. Arrange salad greens on plates. Cut watermelon pulp into cubes and spread on top of salad greens.
Whisk balsamic vinegar with honey and olive oil, season with salt. Drizzle dressing over salad and season with freshly ground pepper. Serve.

Healthy, because
Lamb's lettuce and rocket are particularly rich in folate (folic acid). The vitamin is particularly important for women, and has been proven to prevent neural tube defects (malformations) in the unborn child when trying to have children or during pregnancy.

The aromatic cantaloupe or Charentais melon is also delicious with the salad. You can also easily spice up your salad with roasted pine nuts and goat cheese.
