- 4 slices Sirloin steak (each 180 grams)
- salt
- freshly ground peppers
- 2 Tbsps soybean oil
- 100 grams Arugula
- 100 grams Summer Spinach or lamb's lettuce
- 2 Tbsps Corn oil
- 2 Tbsps white balsamic vinegar
- 1 generous pinch Mustard
- 1 pinch sugar
- scallions (for garnish)
Preparation steps

Rinse arugula and spinach and spin dry. Mix corn oil, mustard and oil in a bowl and season with salt and pepper. Heat soybean oil in a heavy frying pan, place steaks into the pan, fry for about two minutes on each side and season with pepper.

Remove the pan from heat and let stand for about 5 minutes. Meanwhile, mix arugula and spinach in a bowl with mustard mixture and transfer to plates. Sprinkle with chopped chives. Cut steaks into strips and season with salt. Arrange beef on the salad and serve.
