8 ozs Lettuce (such as arugula, lamb's leaf and baby spinach)
3 Clementine
2 Tbsps apple cider vinegar
3 Tbsps grapeseed oil
1 pinch sugar
salt
peppers
1 pomegranate
6 Tbsps Feta
2 Tbsps Pine nuts

Preparation steps

1.

Rinse, trim and spin lettuce dry. Tear lettuce into smaller pieces if needed.

2.

Peel two of the clementines and cut into slices. Squeeze juice from remaining clementine and whisk with vinegar and oil. Season with sugar, salt and pepper.

3.

Halve pomegranate and press out seeds. Remove any white skin from seeds.

4.

Mix all of the prepared salad ingredients in a large bowl and then divide among plates. To serve, top with crumbled feta, sprinkle with pine nuts and drizzle with dressing.
