- 1 yellow onion
- 75 grams roasted, salted Peanuts
- 100 grams fresh Mountain cheese
- For the vinaigrette
- 1 organic lemon
- 1 garlic clove
- 8 Tbsps Canola oil

Preparation steps

Rinse and trim beans. Cook beans in plenty of salted boiling water until al dente, about 10 minutes. Drain and rinse with cold water. Peel, halve and thinly slice onion.

Coarsely chop peanuts and crumble or grate cheese. To make vinaigrette: Rinse lemon with hot water and finely grate some of the zest. Cut lemon in half and squeeze juice. Whisk together lemon juice, zest, 1 clove of garlic pressed through a garlic press, and rapeseed oil. Season with salt and pepper. Combine salad ingredients with vinaigrette and toss to combine. Let marinate at least 1 hour before serving.
