- 2 ripe Apple (such as Boskop)
- 500 grams carrots
- 2 Tbsps lemon juice
- 200 grams Natural yogurt
- 1 Tbsp olive oil
- 2 Tbsps Crème fraiche
- salt
- freshly ground peppers
- sugar
- 150 grams Wild garlic cheese (whole piece)
Preparation
1.
Peel apples and carrots. Quarter and core apples. Coarsely grate both apples and carrots and mix with 1 tablespoon lemon juice.

To make dressing: Mix yogurt with oil, remaining lemon juice and sour cream. Season with salt, pepper and a pinch of sugar.

Cut cheese into cubes and add to dressing. Fold in apple-carrot mixture and mix well. Season again to taste and divide among bowls. Serve garnished with wild garlic leaves.
