- 9 ozs Chicken breasts (with the skin)
- 1 Tbsp clarified butter
- 3 cups mixed salad (rocket, endive... )
- 1 carrot
- 1 Tbsp white wine vinegar
- 3 Tbsps Seed oil
- ¼ honeydew melon
- ⅔ cup white wine (medium dry)
- 3 Tbsps Cranberry
- 2 Tbsps sugar
- ½ lemon (juice)
- salt
- freshly ground peppers
- 2 slices Bread (for toasting)

Preparation steps

Rub the meat with salt and pepper and fry in a heavy-based pan over a medium heat for about 12 minutes, turning frequently. Take out of the pan and keep warm.

Wash and trim the salad leaves and spin dry. Peel the carrot and cut into julienne strips (matchsticks).

Mix the vinegar, salt, pepper and oil to a marinade. Prepare melon balls from the melon quarter using a melon baller.

Bring the white wine to the boil with the sugar and reduce by about 1/3. Remove from the heat. Add the cranberries with some of the juice, the melon balls and lemon juice and leave to cool.

Cut small stars from the bread and fry them in butter until they are golden brown. Place on kitchen towel and drizzle with cranberry sauce.
6.
Mix the salad and carrot matchsticks with the marinade and place on plates.
7.
Cut the meat into diagonal slices, arrange on the salad. Spoon cranberry and melon sauce over it and decorate with bread stars.
