- 2 whole Oranges (juiced)
- 2 Muscovy ducks about 300 g (approximately 11 ounces)
- 1 tsp Ghee (or clarified butter)
- 1 Tbsp Orange blossom honey
- salt
- sugar
- freshly ground peppers
- 200 milliliters chicken stock
- 2 ripe Mangoes (cubed)
- 2 tsps Red pepper flakes

Preparation steps
1.
Preheat the oven to 190°C (approximately 400°F).

Score the duck breast skin crosswise and season with salt and pepper.
3.
Heat the ghee in a large pan and sear the duck, skin side down for 2 minutes. Flip and sear the other side for 2 minutes. Place skin side up in an ovenproof dish. Brush with honey and bake for 15 minutes.
4.
Remove the duck breasts from the oven. Combine the mango cubes with the pan drippings, orange juice and poultry stock. Boil for 2-3 minutes, until slightly reduced. Season with salt, sugar and red pepper flakes.
5.
Let the duck breasts rest for 3-4 minutes, then cut into slices and serve over rice with the chilli mango relish.
