- 4 Tbsps sugar
- 30 grams butter
- ½ tsp Ammonium carbonate
- 1 Tbsp Rum
- 1 egg
- 150 grams Pastry flour
- 75 grams finely chopped Walnut
- cinnamon
- Mace
- allspice
- Cardamom
- 1 tsp Lemon peel
- 1 organic lemon
- 1 pinch salt
- 50 grams Dark chocolate (75%)

Preparation steps

Cream the butter and sugar until light and fluffy. Dissolve the ammonium carbonate in the rum. Add to the butter mixture along with the egg and mix until combined. Combine the flour and nuts. Mix the spices together. Add 1 teaspoon spices to the flour mixture along with lemon zest and salt. Knead until combined then cover with plastic wrap and chill overnight.

Shape the dough into a roll, form into 20 balls and flatten slightly. Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper, arrange the cookies on the baking sheet and bake for 15-20 minutes. Decorate with melted chocolate and walnuts, if desired.
