- 2 square Wafer (approximately 12x20 cm or 5x9 inches)
- 60 grams Cashews
- 60 grams almonds (skins removed)
- 60 grams Hazelnuts (skins removed)
- 300 grams candied Fruit (such as cherries, apricots and figs)
- 1 Tbsp Pastry flour
- ½ tsp Gingerbread spice
- 100 grams honey
- 100 grams sugar

Preparation steps
1.
Preheat oven to 140°C (approximately 275°F). Line a rectangular baking pan (about 20x24 cm or 8x9 inches) with parchment paper and cover with wafer cookies.
2.
Coarsely chop nuts and fruits. Mix together with flour and gingerbread spice.
3.
Heat honey and sugar in a small saucepan until melted. Mix in fruit and nut mixture and spread into the pan. Bake in oven about 25 minutes.
4.
Remove from oven and allow to cool in the pan. Remove from pan and cut into small squares.
