Frozen Yogurt and Caramelized Walnuts with Honey

- 2 ozs Walnut
- 2 Tbsps sugar
- 18 ozs Yogurt (low-fat)
- 1 Tbsp lemon juice
- 2 Tbsps powdered sugar
- 3 ozs Whipped cream
- 2 Tbsps honey
Line a baking sheet with parchment paper. Coarsely chop the walnuts. In a saucepan, melt the sugar over medium heat, without stirring until caramelized. Add the nuts, mix together then turn the mixture out onto the baking sheet. Let cool, then coarsely chop.
In a bowl, stir together the yogurt, lemon juice and powdered sugar. Beat the cream until stiff and gradually fold it into the yogurt mixture. Fold in the caramelized walnuts, and spoon the mixture into a chilled bowl. Smooth and freeze for at least 4 hours, stirring occasionally with a spoon during the first hour.
Scoop balls of frozen yogurt into dessert bowls and drizzle with honey.
