- ½ cup butter
- 1 cup gluten-free all purpose flour (plus extra for coating)
- 2 cups milk
- 2 egg yolks
- 1 cup grated Mozzarella
- 39 ozs cooked ham (finely chopped)
- 1 Tbsp snipped Chives
- 1 egg (beaten)
- salt
- freshly ground Black pepper
- 2 cups dry gluten-free breadcrumbs
- vegetable oil (for deep frying)
Preparation steps

Melt the butter in a pan over a low heat. Stir in the flour and cook for 2 minutes, stirring. Set aside to cool.

Heat the milk in a pan, bring to a boil, then reduce to a simmer. Whisk in the flour mixture, a little at a time, until well blended. Simmer until thickened and smooth. Remove from the heat and allow to cool a little.

Stir in the egg yolks, cheese, and ham and allow to cool completely.

Sprinkle flour on a plate and season with salt and pepper.

Mould the cooled mixture into about 30 balls. Toss in the flour to coat, then dip in the egg and roll in the breadcrumbs.

Heat the oil in a deep pan to about 170°C | 325°F and fry the balls, a few at a time for 7-8 minutes until golden. Drain on absorbent kitchen paper.
