Rinse the rhubarb, and remove any of the stringy fibers. Cut the rhubarb into small pieces. Add the rhubarb to a pot with the sugar, lime juice, and 1.5 liters (approximately 1.5 quarts) of water and bring to a boil. Reduce the heat and simmer gently for 10-15 minutes until the rhubarb starts to break down. Line a fine strainer with a cheesecloth or a kitchen towel and place over a bowl. Pass the rhubarb mixture through the strainer, and let drain for 10 minutes. Squeeze the remaining juice from the rhubarb mixture, then add the juice back to the pot. Simmer the juice for 5 minutes, then pour into clean bottles. Seal tightly and cool completely.
