For the chile lime syrup
300 grams sugar
2 green chili peppers
3 Limes
3 Tbsps finely chopped mint

Preparation steps

For the chile lime syrup: Combine the sugar and 250 ml (approximately 1 cup) of water in a saucepan and bring to a boil. Simmer for about 5 minutes, until syrupy. Rinse the chile peppers, cut in half lengthwise, remove the ribs and seeds and chop finely. Rinse, zest and juice the limes. Add the lime juice, lime zest and chopped chile peppers to the sugar syrup and boil for another 3-5 minutes. Remove from heat, let cool and stir in the finely chopped mint.

Peel the pineapple, cut into slices and arrange on plates. Drizzle the sliced pineapple with the chile lime syrup and serve any remaining syrup on the side.
