- For Salad Dressing
- 2 cloves garlic cloves (peeled and finely chopped)
- 1 tsp yellow mustard
- 2 Tbsps white wine vinegar
- salt (to taste)
- freshly ground Black pepper (to taste)
- 4 Tbsps olive oil
- For Salad
- 2 Apple (peeled; halved; cored and sliced)
- 2 Tbsps butter
- 1 Tbsp granulated sugar
- 2 Tbsps Pine nuts (toasted)
- 2 bunches Arugula (washed and picked over)

For Salad Dressing:

In a small bowl, combine garlic, mustard, white wine vinegar, salt, pepper and olive oil. Whisk until a creamy consistency forms. Set aside.

For Salad:

Combine butter and sugar in a skillet over medium heat. Add sugar; stir with a wooden spoon to dissolve. Add apple slices and cook until apples are caramelized and golden in color.

To Assemble:

Place the arugula in a large bowl. Drizzle dressing over the top and toss to thoroughly coat. Divide the arugula evenly between four plates. Top with caramelized apple slices and sprinkle with toasted pine nuts. Serve.
