Put the rice in a pan and cover with twice its volume of water.
Add the cardamom pods and bring to a boil. Reduce the heat and simmer for 10-12 minutes, partly covered with a lid, until cooked. Remove and discard the cardamom.
Stir in the lime juice and coriander stalks.
Spoon the rice into serving bowls and scatter over the coriander leaves.
