Floral Popsicles

- 1 lemon
- 7 ozs sugar
- 1 Tbsp Rose water
- 2 handfuls Edible flowers (e.g. Roses and pansies)
- 20 ozs mineral water (tangy)
Rinse the lemon in hot water, wipe dry and zest thinly. Squeeze the juice and let both boil with the sugar and 1 cup water. Simmer about 5 minutes, remove from the heat and stir in the rose water. Allow to cool completely in the refrigerator.
Spread half of the flower petals into ice cube trays. Pour in some of the syrup and mineral water about halfway up the cubes. Freeze for about 2 hours. Fill with the remaining flowers, syrup, and mineral water. Freeze for about 1 hour.
Insert popsicle sticks and completely freeze, at least 3 hours.

These extremely low calorie popsicles are fresh, flavorful, and fun. Rarely do we incorporate edible flowers into our diets, but they are a pleasant addiition that are high in antioxidants.

You could also add a bit of coconut milk to this recipe to make it a bit more satiating.
