- 16 ozs Halibut (rinsed and patted dry with paper towels)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 1 Tbsp Chipotle powder
- 1 tsp ground Cumin
- 1 tsp dried oregano
- ¼ cup fresh cilantro (finely chopped)
- 4 Tbsps olive oil
- 8 Corn tortilla (warmed)
- ½ cup fresh Guacamole
- ½ cup Tomatoes (diced)
- 1 Lime (cut into wedges)

Preparation steps
1.
Preheat grill to medium/high. Generously grease the grates of the grill.

Place fish in a shallow bowl or casserole dish and season both sides with salt and pepper. Combine the chipotle, cumin, oregano, cilantro and olive oil together until well blended. Spread seasoning mixture over both sides of each fillet. Cover and refrigerate for 1 hour.

Grill the fish 5-8 minutes without moving it, until the fish is opaque and flakes easily. Gently remove from the grill and transfer to a clean serving plate. Cover loosely with foil and let sit for 4 minutes.
4.
Remove foil and gently cut the fish into 2” pieces. Serve immediately with warmed tortillas, guacamole, diced tomatoes and wedges of lime.
