- 2 Tbsps olive oil
- 2 onions (chopped)
- 2 garlic cloves (finely chopped)
- 1 small red chili pepper (seeded and finely chopped)
- 1 sm package Saffron
- Sea salt
- freshly ground peppers
- 400 grams crushed Tomatoes (canned)
- 1 Tbsp tomato puree
- 200 milliliters white wine
- 400 grams potatoes
- 350 grams Mixed seafood (such as mussels, clams, shrimp, octopus, etc. as desired)
- 600 grams fish fillets (such as cod, redfish, tuna, etc.)
- ½ bunch parsley (finely chopped)

Preparation steps

Heat olive oil in a large skillet. Add onion, garlic, chile peppers and saffron and cook over medium heat for about 10 minutes. Add crushed tomatoes, tomato purée and white wine, bring to a boil, reduce heat slightly and let simmer for 5 minutes. Peel potatoes, chop, add to the skillet, let simmer for 15 minutes and season with salt and pepper.

Add prepared and trimmed seafood and stir. Then place fish fillets on top. Cover and cook over medium heat for another 10 minutes. Sprinkle with plenty of parsley. Serve in soup bowls with fresh white bread if desired.
