- 12 ozs Puff pastry
- ⅛ cup unsalted butter (melted)
- 2 Mangoes (peeled and diced)
- 2 Tbsps honey
- 2 Limes (juice)
Preparation steps

Heat the oven to 200°C (180° fan) 400°F gas 6. Line a baking tray with non-stick baking paper.

Roll out the pastry and cut out 4 rounds, about 12cm|5" in diameter. Score around the edge of the rounds, about 1cm|1/2" from the edge with a sharp knife, but don't cut right through the pastry.

Brush the pastry with some of the butter and place the rounds on the baking tray.

Put the diced mango in the centre of the rounds and drizzle with honey and lime juice.
5.
Brush the tops with butter and bake for 10-15 minutes until golden and risen. Serve immediately.
