Rinse rhubarb, trim, reserve 1/2 stalk and cut the rest into small pieces. Mix rhubarb with lemon juice, sugar and 150 ml (approximately 1/2 cup) of water in a pot. Bring to a boil, reduce heat and simmer for about 10 minutes over medium heat. Puree rhubarb mixture and press through a sieve. Pour pureed rhubarb into a metal bowl and place in the freezer to set for 5 hours. Stir every 30 minutes.

Cut reserved rhubarb into thin slices. To serve, spoon out balls of rhubarb sorbet, arrange on plates or in bowls and serve garnished with sliced rhubarb.
