- 4 Pork cutlets (each around (approximately 7 ounces and approximately 3/4 inch thick)
- 4 slices Swiss cheese
- 4 slices cooked ham
- salt
- freshly ground peppers
- 2 eggs
- 2 Tbsps Pastry flour
- 8 Tbsps breadcrumbs
- 2 Tbsps vegetable oil
- 2 Tbsps butter

Preparation steps

With a sharp knife, cut a pocket in the side of each pork cutlet. Stuff each with a slice of cheese and ham then seal with wooden skewers and season with salt and pepper. Whisk the eggs in a deep dish. Arrange the flour and breadcrumbs in separate shallow dishes. Dust the meat in flour, dip in beaten eggs and coat in breadcrumbs.

Heat the oil and butter in a large frying pan over medium heat. Fry the cutlets until golden brown on each side, and serve.
