4 Tbsps balsamic vinegar
2 Tbsps Caper
4 Tbsps freshly grated Parmesan
3 Tbsps chopped almonds
1 Tbsp freshly chopped mint
2 Tbsps olive oil

Preparation steps

Soak the tomatoes with vinegar and water and for 8 hours. Chop the capers, mix with the parmesan, mint, a tablespoon of oil and season with salt and pepper. If the paste is too hard, add some oil. If it is too soft, add parmesan or almonds until the mixture has a malleable, paste-like consistency.

Put the tomatoes in a colander and drain. Sprinkle the tomatoes with oil, sprinkle with salt and pepper. Add a teaspoon of the filling on the inside of the tomato, roll up and secure with a toothpick. Arrange on a plate and serve with white bread.
