scallions (finely chopped)

Preparation steps

1.
Mix the vegetables together in a large bowl.

Mix the vinegar and oil, season with a little sea salt and stir into the vegetables. Set the salad aside.
3.
Place the eggs in a pan of boiling water and boil for about 5 minutes. Cool the eggs under cold running water then carefully peel off the shells.
4.
Stir the herbs into the salad and place in serving bowls. Add an egg to each bowl and garnish with a sprig of coriander.
