1 Mustard
1 Caper
1 tsp lemon juice

1 Tbsp White vinegar
12 Shrimp tails

Preparation steps

1.

Separate eggs. Refrigerate egg whites and whisk egg yolks in a bowl with a little salt. Gradually add oil, first in drops and then stir in a fine thin stream. Use a whisk to mix until mixture is creamy. Add a few drops of lemon juice and mustard. Chop capers and stir and season with lemon juice.

Mix flour in a bowl with vinegar and enough water to form a thick batter. Let rest for 30 minutes. Beat egg whites until stiff and gently fold into batter.

Rinse shrimp tails and pat dry with paper towels. Heat oil in pot or pan. Dip shrimp tails in batter, so they are covered all over with batter. Fry shrimp tails on each side in the pan for a few minutes until crispy brown.

4.

Serve shrimp tails while hot. Serve with mayonnaise dip if desired.
