1 Cutting board, 1 Small knife, 1 Mixing bowl, 1 Immersion blender, 1 Tablespoon, 1 Hand mixer, 1 Bowl, 1 Kitchen scale, 1 Teaspoon, 1 Fine-mesh sieve, 1 rectangular Casserole dish (about 11" x 7"), 1 Rubber spatula

Preparation steps

Halve dates, remove pits and place in a large mixing bowl. Puree with an immersion blender.

Add eggs, oil, and sour cream and stir until creamy with a hand mixer.

In another bowl mix together flour, baking powder and cinnamon. Combine with date mixture to create a batter. If batter is very stiff, mix in some water.

Rinse mango, peel and cut flesh into cubes.

Grease a small rectangular baking dish (11" x 7"). Pour in batter and smooth surface with a spatula.

Distribute mango cubes over the cake and bake in a preheated oven at 350°F on the middle rack for 35-40 minutes. Remove cake from oven and allow to cool in baking dish. Cut into 10 equal pieces and serve cake out of the baking dish.
