- 2 garlic cloves
- 1 pc ginger (each 3 cm)
- 2 Tbsps sesame oil (and oil for the pan)
- 2 Tbsps Curry powder
- salt
- freshly ground peppers
- 2 chicken (each 1 kg)
- 1 Zucchini
- 150 grams dried Date
- 1 Tbsp butter
- 200 grams Instant couscous
- cayenne pepper
- 1 splash lemon juice

Preparation steps

Preheat the oven to 175°C (approximately 350°F). Peel garlic and ginger and finely chop. Heat oil in a pan and saute garlic and ginger until soft. Then remove from the pan and mix in a bowl with curry powder, salt and pepper. Rinse chicken, pat dry and rub with curry mixture. Place chicken in a greased baking dish and bake for about 1 hour in the preheated oven.

Rinse zucchini, trim and cut into small cubes. Remove pit from dates and cut into cubes. Melt butter in a pan and saute zucchini. Add 400 ml (approximately 13 1/2 ounces) of water, add couscous, bring to a boil, cover, remove from heat and let rest. Add dates, mix and season with salt, pepper and lemon juice.

To serve, arrange couscous on a plate and cover with chicken.
