- 400 grams Pork cutlet
- 2 Tbsps vegetable oil
- 4 tsps Curry powder
- 100 grams Cashews (unsalted)
- 400 milliliters Cream of leek soup (canned)
- 50 milliliters Orange juice
- 2 Tbsps Whipped cream
- 600 milliliters Vegetable broth
- 250 grams Couscous (Instant)
- salt
- peppers
- Chives (for garnish)

Preparation steps

Rinse pork cutlets, pat dry and cut into strips. Fry pork cutlets in hot oil on all sides, about 5 minutes. Add curry and cashews and deglaze with cream of leek soup and orange juice. Simmer about 3 minutes. Stir in cream and season with salt and pepper.

Meanwhile, bring vegetable broth to a boil. Add couscous and let stand until liquid is absorbed, about 5 minutes. Fluff with a fork and divide couscous among plates. Top with pork and serve garnished with chives.
