1 kilogram black Currants
500 grams jam sugar (2:1 ratio)
50 milliliters Rum
2 Limes (juiced and zested)

Preparation steps

Rinse the currants and drain thoroughly, then remove the currants from the vine. Mash half fo the currants with the rum, jam sugar, lime zest, and lime juice. Add the whole currants, and stir until combined. Let infuse for 30 minutes. Bring the mixture to a boil, stirring constantly. Cook for 4-5 minutes, then remove from the heat.

Fill the prepared, sterilized jars to the brim with the jam. Seal tightly and turn upside down for 5 minutes to cool slightly. Turn right side up and cool completely.
