2 jars Anchovy (in oil, 90-100 grams each)
1 small Cucumber
3 Pickled cucumbers
1 onion (blue)
70 milliliters Pickling liquid
2 Tbsps White balsamic vinegar
½ bunch Chives

Preparation steps

Drain and chop the anchovies. Peel the cucumber and slice in half lengthwise. Remove the seeds and cut into cubes. Drain the pickles and chop into small cubes. Peel the onion and chop finely.

Combine everything in a bowl with pickling liquid and the white balsamic vinegar and mix well. Season with salt and pepper and leave to marinate for 30 minutes.

Rinse the chives and shake dry. Set some strips aside for the garnish and cut the rest into small rings. Mix into the salad shortly before serving and then transfer into glasses.

Garnish with chive strips and serve with fresh bread as desired.
