- 2 handfuls fresh Fresh herbs (such as cilantro, lemon balm, or basil)
- 4 Tbsps olive oil

- 2 Tbsps balsamic vinegar
Preparation

Rinse the cucumbers, then peel thinly with a vegetable peeler. Arrange the slices on 4 plates. Peel the celery root, and grate into thin slices, then spread over the cucumbers.

For the dressing, mix the oil, vinegar, and 2 tablespoons of cold water. Season to taste with salt and pepper, then drizzle over the vegetables. Top the salad with fresh herbs and serve.
