- For the beef
- 35 ozs Fillet of Beef
- 1 clove garlic cloves (crushed)
- 1 Tbsp Dijon mustard
- 1 Tbsp lemon juice
- 1 Tbsp olive oil
- 2 Tbsps parsley
- 2 Tbsps chopped Tarragon
- 2 Tbsps freshly chopped thyme
- ½ tsp salt
- ½ tsp freshly ground peppers
- For the Yorkshire puddings
- 2 Tbsps butter
- 1 small onion (finely chopped)
- 1 Tbsp all-purpose flour
- ⅜ cup milk
- 4 cups Spinach
- boiling water
- ¼ cup cream (35% fat)
- grated Nutmeg
- salt
- peppers
- 4 Yorkshire pudding

Preparation steps
1.
For the beef: preheat the oven to 200°C (180° fan) | 400F | gas 6.
2.
Place the beef in a roasting tin. Combine the garlic, mustard, lemon juice and oil and rub into the beef.

Mix together the herbs, salt and pepper and press into the top of the meat.
4.
Roast for 20-25 minutes for rare beef, 40 minutes for medium, or 50 minutes for well-done.

Remove from the oven and cover loosely with foil. allow to stand for at least 15 minutes before carving.

For the Yorkshire puddings: heat the butter in a pan, then add the onion and cook for 5 minutes until softened.
7.
Stir in the flour and cook for 2 minutes, then slowly whisk in the milk. Cook, stirring over a low heat for a few minutes until the sauce has thickened.
8.
Put the spinach in a colander. Pour over the boiling water until the leaves have wilted Place the spinach in a clean tea towel and squeeze out any excess liquid, then chop roughly.
9.
Stir into the sauce with the cream, gently heat, then grate over a little nutmeg and season well.
10.
Spoon into the Yorkshire puddings and serve with the beef.
