Creamy Smoked Fish Soup

- 1 onion
- 2 garlic cloves
- 200 grams Celery root
- 2 Tbsps butter
- 2 Tbsps Pastry flour
- 800 milliliters fish stock
- 400 grams Smoked trout (skinless)
- 200 milliliters Whipped cream (30% fat conten)
- salt
- freshly ground peppers
- 1 Tbsp lemon juice
- fresh Dill (for garnish)
Preparation

Peel and dice the onion and the garlic cloves. Peel the celery root, dice and sauté along with the onions and garlic in butter about 2 minutes. Sprinkle in the flour and pour in the fish stock.

Cut up 300 grams (approximately 10 ounces) of the trout and add it to the soup along with the cream. Simmer gently on low heat about 20 minutes, stirring occasionally. Puree and season with salt, pepper and lemon juice.

Ladle soup into bowls. Cut up the rest of the trout finely and arrange on the soup. Serve garnished with dill and freshly ground pepper.
