- 1 shallot
- 1 Red chili pepper
- 2 handfuls cilantro
- 200 grams crayfish
- 100 grams Quark
- 80 grams cream cheese
- salt
- freshly ground peppers
- sweet ground paprika
- 1 Tbsp lemon juice
- 8 Pumpernickel rounds
- Lemon wedge (for garnish)
- cilantro (for garnish)
Preparation
1.
Peel the shallot peel and finely chop. Finely chop the red chile pepper as well. Rinse the cilantro, pluck leaves and finely chop. Cut the crawfish meat into small pieces and mix with the shallot, chile and cilantro. Add the quark and cream cheese and mix throughly. Season with salt, pepper, paprika and lemon juice. Chill for approximately 30 minutes in the refrigerator.

Using an ice cream scoop, form 8 half balls and place on pumpernickel bread. Serve with lemon wedges and cilantro.
