- For the salad
- 3 ⅓ cups Zucchini (cut into thin strips or grated)
- 2 ½ cups Gouda (grated)
- 1 hard-boiled egg (finely chopped)
- 2 gherkins (finely chopped)
- 1 shallot (diced)
- 3 Tbsps mixed Fresh herbs (e. g. parsley, dill, chives, chervil; chopped)
- For the dressing
- 3 Tbsps white wine vinegar
- 5 Tbsps rapeseed oil
- Plus
- 1 Radicchio
- 1 microgreen

Preparation steps
1.
Mix together the courgette and the Gouda.
2.
Mix together the shallot, egg, gherkins and herbs and stir into the courgette mixture.
3.
To make the dressing, mix together the vinegar, salt, ground black pepper and the oil pour over the salad and mix well.
4.
Carefully remove the leaves from the radicchio and arrange them on plates. Arrange the salad on top of the leaves and garnish with cress. Serve immediately.
