Variations: Gluten free polenta, orange and chocolate chip cookies: replace the flour by brown rice flour, and the chocolate chips by their gluten free version. Add some orange peel in the mix for extra flavour, or some orange water. Honey and polenta White chocolate chip cookies: add a tablespoon of Lavender honey and a tablespoon of flour to the above recipe, and replace the dark chocolate chips by white chocolate.

Preparation steps

1.
Preheat the oven to 180°C | 350F | gas 4.

In a bowl, whisk the egg with the sugar then add the butter and mix well.

Add the polenta (without cooking it before), flour and baking powder.

Once the mixture is smooth, take a tablespoon of dough, quickly forming a ball with your fingers and place on a baking sheet. Flatten with a spoon to form the cookie.
5.
Space the cookies well on the sheet. Bake for 15 minutes, then add the chocolate chips (they should stick to the cookies but not melt). Leave to cool and set before serving.
