- For the cooked cheese
- 100 milliliters Whipped cream
- 50 grams butter
- 100 grams Harzer Cheese
- 125 grams Quark
- ½ tsp baking soda
- to serve
- 1 small red onion
- ½ handful Chives
- 8 slices Farmhouse bread
- 20 grams butter

Preparation steps

Heat the butter slowly with the cream in a large pot. Cut the cheese into small cubes, add it to the pot and allow it to melt, stirring occasionally. When it starts to boil, remove the pot from the heat and stir in the quark. Stir in the baking soda. Immediately pour into a bowl and refrigerate overnight.

For the bread: Spread the bread slices with butter.
Before serving, peel and chop the onion. Rinse and slice the chives. Spread the cooked cheese on the buttered bread. Serve sprinkled with onion and chives.
