1 l clear Consommé
1 Wild herb ((such as cats Valerian, Giersch, wild garlic, sorrel, freshly chopped)
6 Dover sole (Fillets)
salt
freshly ground peppers
2 Tbsps lemon juice

Preparation steps

1.

Halve sole fillets lengthwise and season with salt, pepper and lemon juice. Divide herbs over fish, then roll fillets up and tie securely with chives.

2.

Heat consommé. Divide sole rolls between preheated bowls and top with hot broth. Cover bowls and let stand a few minutes until fish is cooked through. Serve sprinkled with additional herbs.
