Preparation

Beat egg whites with 1 pinch of salt until stiff. Gradually sprinkle in sugar while stirring. With a tablespoon, pile small heaps, each around 5 cm (approximately 1 3/4 inch) diameter, on a baking sheet lined with parchment paper and bake at medium heat about 80°C (approximately 175°F) for about 1.5 hours, slowly more drying out than baking, so that the meringue retains its beautiful white color and is crispy.

Brew the coffee, set a meringue on top of each cup and serve dusted with cocoa.
